Dairy buffaloes
The primary aim of dairy buffalo farming is milk production, most of which is intended for dairy processing, particularly for buffalo mozzarella. The animals are selected for their milk-producing capacity and require careful, specialised management. This type of farming involves the use of milking equipment, a balanced diet to support milk production, and constant health monitoring, particularly regarding udder health and product quality.

Meat buffaloes
Meat buffalo farming, on the other hand, is geared towards meat production and involves the genetic selection of animals based on slaughter yield and muscle growth. This system is generally simpler and less structured than the dairy system, as it does not require milking facilities or a feeding regime designed to promote lactation. Buffalo meat is prized for being lean, rich in iron and protein, and ideal for light, healthy diets.

Campania Buffalo Mozzarella
A breed symbolic of central and southern Italy, the Italian Mediterranean buffalo produces milk that is unique in its richness of fat and protein, making it ideal for Campania Buffalo Mozzarella PDO.
From 100 kg of milk, over 24 kg of mozzarella is produced – almost double the amount obtained from cow’s milk.
Campania Buffalo Mozzarella, recognised as a PDO in 1996, is one of Italy’s most exported cheeses, with a production of over 47 million kg and a herd of 345,000 animals.
The A.N.A.S.B. (National Association of Buffalo Breeders) protects the breed, promoting quality, traceability and genetic innovation.

Buffalo meat
Buffalo meat is a valuable resource for Italy, yet it remains underutilised despite its excellent nutritional qualities.
Buffalo farming is widespread in the same regions as the Mozzarella di Bufala Campana PDO , including Campania, southern Lazio, Apulia and Molise.
Housing
THE IDEAL BARN
There is no single ‘ideal’ barn that is suitable for all situations, but rather a range of designs which, when properly developed, can best meet different specific requirements.
The various housing solutions adopted are evident, ranging from those entirely on litter, to those with a resting area on litter and a mechanised feeding area or slatted flooring, to those entirely on slatted flooring.
The functionality of the barn depends on the correct integration of the structure with the various pieces of equipment and the associated mechanisation. Once the type of barn has been decided, the choice of the correct equipment therefore becomes the factor determining its efficiency.
